Banana Muffins


Nutritional Information is for 1 serving.

Recipe makes 12 muffins.


Ingredients

2 eggs

1/4 milk

1/4 cup olive

1/4 honey

1tsb coconut sugar

2 large bananas mashed

1tsb bicarbonate

1/2tsb nutmeg

1/2tsb cinnamon

1/2tsb salt

1 1/2cup all purpose flour


Method

Preheat oven to 180°C. Spray a 12 case muffin tin with olive oil cooking spray.


Add eggs and milk to large bowl and whisk to combine.


Next, add the olive oil, and coconut , while you continue to whisk.


Mixed through the mashed bananas, bicarb soda, and cinnamon, until nicely combined.


Lastly mix in the salt and the flour.


Divide the mixture between the 12 and cook for 20-23minutes.


Allowing cooling for 5mins before transferring to a cooling rack.
